Peanut Brittle Recipe
1 cup Karo
2 cups sugar
1/2 cup water
3 teaspoons baking soda
1/2 pound raw spanish peanuts
2 tablespoons butter
2 teaspoons vanilla
1 teaspoon salt
Combine Karo, sugar, and water. Slowly bring to a boil then cook to soft ball stage (240 deg F at sea level).
Add peanuts, stir and cook to hard crack (300 deg F at sea level). Make sure to stir frequently or peanuts will
burn. Remove from heat and add remaining ingredients. Note: you must stir and pour into a 13" x 9" pan quickly;
sets FAST. Caution: Adding remaining ingredients creates a lot of steam, stir with caution!
Let set until cool, break to desired size, ENJOY.
